Sweet Potato Nachos

Nacho Cheese

1 tablespoon butter

1 tablespoon flour

1 cup milk

1 teaspoon salt

½ teaspoon pepper

½ teaspoon ground cumin

½ teaspoon garlic powder

1 ½ cups grated sharp Cheddar cheese

½ cup Prayani Raita (Find near me)

Heat a medium saucepan over medium heat. Add in the butter and swirl around until melted. Add in the flour and whisk continuously for one minute, until a thin, tan paste forms. While continuing to whisk, gently pour in the milk. Continue whisking for 3 minutes until the milk thickens so that it coats a spoon. Season with salt, pepper, and the spices. Stir in the Cheddar cheese and keep stirring until the cheese is completely melted. Finally, off the heat add in the Prayani Raita and stir to combine.

Sweet Potato Chips

3 sweet potatoes, peeled and sliced into ¼ inch rounds

1 tablespoon vegetable oil

2 teaspoons salt

½ teaspoon pepper

1 teaspoon paprika

Preheat oven to 425 degrees.

Mix all of the sweet potatoes with all the seasonings. Transfer to a sheet tray lined with parchment paper. Bake the sweet potatoes for 40 minutes, flipping once halfway through, until soft and lightly crispy.
