Roasted Carrots


1 lb. carrots, sliced in half lengthwise

½ teaspoon turmeric

1 teaspoon cumin

1 tablespoon olive oil

2 teaspoons white wine vinegar

2 cloves garlic, thinly slice

¼ cup chopped fresh cilantro

Prayani raita (Find near me)

Preheat oven to 400 degrees.

On a baking tray lined with parchment paper, mix together the carrots and all of the seasonings except for the cilantro. Pour about a ¼ cup of water into the pan and cover with foil. Bake in the oven for 20 minutes, then take off the foil and bake for another 10 minutes to brown the carrots.

Once out of the oven, sprinkle the carrots with the cilantro and drizzle with Prayani raita.
